Wake up and head outside for veranda views (tropical gardens, mountains and bird song). Find the hammock for sipping a strong cup of Blue Mountain Coffee.

Make your way over to the main house for breakfast. It’s a good set-up, with plenty of local flavours. Order the Jamaican traditional: ackee and sailfish, sautéed callaloo (a leafy green), fried bammy (cassava), home-style Johnny cakes (cornmeal flatbreads) and fried plantains.

Arrange for a hike – the local guides have the best stories and routes to share. Depending on the length of the hike, have lunch at a nearby spot, and your host will show you the best spots on the island.

Back in time for a long and lazy afternoon. Infinity pool first, followed by the spa. Soak up the views, they're beautiful.

Rum punch in the bar (spot the glamorous A-list stars on the wall, there are so many photographs of familiar faces). If the stars align, you'll hear some live piano too.

Time for dinner, all by candlelight on the veranda at the main house. Traditional dishes get a contemporary makeover here. Leave room for the ice cream, it's good.
