The 18th-century manor house was carefully restored with traditional methods and natural materials including stone, clay, wood and lime render.
They are 60% self-sufficient in their energy needs after the installation of solar panels and four geothermal wells.
Their on-site garden is organic. They also work with local suppliers who source top quality produce from the island.
