Pick one of the nearby walking routes (the team know the best) that thread the ancient mountains. We love a guide-led walk; they’re incredibly knowledgeable and like to point out details in the landscape.

End the physical exertion with a lunch cooked outside. Freshly picked mushrooms and truffles will likely appear on the menu…and they’re good.

Back at the hotel and straight to the spa. Sauna, steam, massages, all set in a very slick space. Take in the quiet here.

Slowly make your way downstairs for dinner. It’s Greek flavours, of course, but with a bit more edge. Including a mutton bolognese or Spetzofai (spicy sausage in peppers) spring rolls. Leave room for the homemade orange cake.

Thanks to the remote location, there’s no light pollution here so head out to the terrace for a glass of ouzo and star gaze.
