An hour from Avignon in the Luberon hills, this 19th-century auberge was reborn in 2024 by Lise, formerly of HolyBelly (one of Paris's best brunch spots), and her husband, chef Eric Monteleon. The food is the reason to come: local Provençal produce, a serious wine list, and real cooking skill. The rooms are simple and charming; the garden terrace at dinner is the place to be.

8:24 AM
It’s one of the best views in the region and not a bad way to wake up. As for breakfast, it’s typically French: bread from the village bakery, house-made jam, and cakes baked by Eric, who’s both the chef and half of Hôtel Saint Hubert.
10:47 AM
One of the best things about the South of France? Every day brings a new village farmer’s market. Always a win – but our favourite has to be in Coustellet on Sunday.
12:00 PM
For lunch, you can snack on your finds from the farmer’s market, or go for a proper bistro meal at Bistro Le France. Don’t miss the leek tatin with stracciatella and pickled cabbage – it tastes just as good as it sounds.
2:56 PM
Afternoons move slowly in the South of France. Those who feel like exploring can head to the lavender fields of Le Plateau d'Albion. Those in the mood to unwind can sunbathe at the village pool – it’s a bit vintage, but seriously charming.
7:34 PM
The bar at Hôtel Saint Hubert is something of an institution, thanks to Lise’s passion for oenology. The wine list is a real gem – all natural and organic. Ask for something local, or treat yourself to a glass of Partida Creus juice (a natural vermouth).
8:30 PM
Don’t expect a menu set in stone, Eric cooks with the seasons and lets the ingredients dictate. Whatever ends up on your plate will be local, thoughtful, and full of flavour. To celebrate it properly, ask Lise to pick a quille (that’s a bottle of a very good wine, in local slang) for you.

They deliberately chose not to be a starred hotel to avoid having to comply with requirements that wouldn’t be sustainable or environmentally friendly.
Find them in a regional park - we love their efforts in helping guests appreciate the lands beauty and preserving the surrounding nature.
They are thoughtful about their water consumption, especially in the kitchen. They always try to reuse as much water as possible.
