Nice makes a strong case as a destination in its own right, and Hôtel du Couvent makes the case for staying longer than a night. Built inside a former Dominican convent dating to the 17th century, it has a beautiful cloister garden, an excellent rooftop pool with sea views, and interiors that respect the building's history while feeling entirely contemporary. A very good Nice address.

9:00 AM
Nice is very much a city of different traditions but at the Couvent, waking up is slow, rising with the bells for warmly baked croissants. Find a table in the courtyard for some carbs made in the bakery the nuns used back in the day.
10:36 AM
You’re already in the Old Town, so head out for a little walk, stopping for a coffee at Frisson. Find the Cours Saleya – it’s a daily market, but from Tuesday to Sunday, they bring in pretty blooms from across France. Happy sniffing.
11:51 AM
Stock up on goods to bring home – souvenirs and French linens at Trésors Publics, syrupy fruits at Maison Auer and funky coloured glassware from Good Design Store nearer the port.
1:15 PM
We love a breezy outdoor lunch. Head up the terraced herb-lined gardens to La Guinguette for cold glasses of wine and crispy fried fritto misto.
3:06 PM
Head down, under the ground, to the Roman-style spa. They are hot and cold pools for a body shock, then hideout in a treatment room for a massage.
5:21 PM
The herbalist’s apothecary is one of the original rooms and functions the nuns used in the 117th century. Time it right for when they are open and ask for a concoction that can heal any ache or pain.
6:34 PM
Freshen up and wear something colourful for a drink at Le Bar downstairs. The Adonis is a riff on a negroni but a bit lighter, fruiter and sprayed with orange blossom.
8:45 PM
Nice has some seriously good spots to eat. Book into La Merenda is one of the best, and they specialise in classic Nissarde flavours – order the pistou pasta too.

Traditional techniques are preserved. The bakery still uses recipes as they did back in the 17th century, and in the same room nonetheless.
Vintage furniture and original features were intentionally blended to keep the essence and nature of the Couvent alive.
An herbalist’s apothecary crafts up tinctures and bespoke tisanes for sleep, digestion, stress and more.
