Have a long lazy morning soak in your tub whilst Florence wakes up. Make your way down to breakfast, we love how beautiful it’s all set up. Handmade pastries, fresh-pressed orange juice, thick-wedges of French toast, pretty fruit salads. You name it.

Hop in the shuttle, it’s only a quick ride to get into Florence’s centre. Don’t worry about hitting all the main spots, it’s a totally walkable city and you’ll see them all (the Ponte Vecchio, Duomo, the piazzas) by foot anyways.

Make sure to secure a table at Vini e Vecchi Sapori. It’s tiny, and chaotic, but wonderfully so, and Madonna plays on the sound system (owner Tommaso is a fan). Split some pastas to share – the pappardelle with rabbit is a favourite.

Back to the hotel pool for a cooling dip. It’s so quiet, it’s easy to tune out the busy morning. Order a spritz at the pool bar. Salute.

La Gamella is their all day restaurant, and you could easily roll from meal into meal. Kick off with antipasti of bluefin tartare, risotto primavera, grilled lamb chops and affogato to finish.

Settle in at Bar Bertelli – once the office of the headmaster – for a drink, ask the bartender to whip you up something classic or new. Those who like a smoke can ask for a hand-rolled Italian cigar in the cigar room.
